A New Year's party is easier than Thanksgiving in every way except one: it runs for five hours and midnight cannot be moved.

How this differs from Thanksgiving

The cooking is easier — no single showpiece dish, nothing that has to rest, no carving. In that sense it is a much gentler evening than the one five weeks earlier.

What makes it harder is duration and the fixed point. People arrive over a two-hour window and stay for five. Food has to be good at eight and still good at eleven. And midnight cannot be moved by twenty minutes because the potatoes are not ready.

So the whole plan is built around food that holds itself, drinks people can serve themselves, and a midnight you have rehearsed in your head.

A week out

  • Settle the headcount. Everything else is a multiple of it.
  • Order the supplies. One kit per guest, 1.5 glasses per guest, one bottle of sparkling per four for the toast.
  • Decide the menu. Six to eight items, all of which hold. See party food that stays hot.
  • Work out where the drinks live. Somewhere that is not the kitchen, ideally, so people are not in your way.
  • If children are coming, plan an early countdown — details in New Year’s Eve with kids.

Two days out

  • Shop. Buy twice the ice you think you need. It is always the thing that runs out, and shops close early on the thirty-first.
  • Make anything that improves overnight — dips, chili, meatballs in sauce. These are better on day two anyway.
  • Chill the sparkling wine. It takes longer than you expect, and a warm bottle at 11:45 is a real problem.
  • Find the warming gear. The tray, the slow cookers, the platters. They are wherever you put them after Thanksgiving.
  • Check the batteries in the flameless candles.

The afternoon of

  • Build the balloon backdrop. Sixty to ninety minutes. Do it now, not at seven.
  • Set up the drinks station. Glasses, ice, mixers, a bin, and a cloth. Away from the kitchen.
  • Start the slow cookers on anything that needs reheating. They will be at temperature by the evening and hold there.
  • Clear surfaces and put out extra bins. The single most useful and least glamorous job on the list.
  • Test the countdown. Whatever screen you are using, whatever stream — check it works and that the sound is loud enough with a room full of people talking.
  • Set out the party kits in a bowl somewhere visible, ready to hand round.

The hour before guests arrive

  • Food onto the warmers. Reheat properly first — warming equipment holds hot food hot, it does not bring cold food safely up.
  • Overhead lights off, lamps and candles on.
  • Music on before anyone arrives. A silent room that fills up slowly is awkward for the first three guests.
  • Coats. Decide where they go now, or they will go on your bed.
  • Pour yourself a drink. The host who is still working at ten is the host nobody gets to talk to.

The midnight plan

Thirty seconds that people remember, and it needs five minutes of thought rather than none.

  1. 11:40 — hand out hats, horns and glasses. Do this early. At 11:58 nobody can find anything.
  2. 11:45 — pour the sparkling wine. Pouring for twenty people takes five minutes, and it is five minutes you do not have at 11:57.
  3. 11:50 — countdown on the screen, volume up.
  4. 11:55 — gather everyone into one room. Go and get the people in the kitchen.
  5. 11:59 — quiet everyone down.
  6. Midnight — and that is the job done.

The next morning

Ten minutes at one in the morning saves an afternoon on the first. Get perishable food into the fridge — food held above 140F is safe while it is held, but not once the warmers are off — and leave a bin bag and scissors by the backdrop.

Then leave the rest. New Year’s Day exists for exactly this.
