Start with the guest list, not the appliance

The planning figure is about 1.25 pounds of whole, bone-in turkey per person for a full plate with a little left over, or 1.5 pounds if leftovers are the point.

The thing that actually decides 18 versus 22

It is not the bird. It is whether you want to roast vegetables underneath it.

Put the turkey on a rack and fill the bottom of the well with potatoes, carrots and onions. They cook in the drippings for three hours and come out better than anything you would have made in the oven — and they cost you no extra oven space or attention. It is one of the genuinely nice things a roaster does.

Eighteen quarts fits a bird. Twenty-two fits a bird and that bed of vegetables. If the second sounds appealing, that is your answer.

Why bigger is not automatically better

A 28-quart roaster with a 12-pound bird in it is a large mostly empty chamber. It heats more air than it needs to, takes longer to come up to temperature, and gives you a slightly less consistent cook.

It is also a substantially larger object to store for eleven months of the year — which is the reason people quietly stop using appliances. Buy for the bird you cook most years, not the largest one you can imagine.

Above about 22 pounds, cook two

The same logic as fryer sizing applies here. Two 13-pound birds beat one 26-pound bird: they cook faster and more evenly, they fit an 18-quart roaster comfortably, they are far easier to lift, and you can cook one in the roaster and one in the oven.

Measure before you commit

Stated capacity is the volume of the cookwell, not a guarantee that your specific bird fits inside with the lid on. Turkeys vary in shape as much as in weight.

Before the day, put the bird in the well and check the lid closes with an inch of clearance above it. If it touches, the lid will not seal, condensation will escape, and you lose the temperature stability that made you buy the roaster.
